Collymoon Craft Gin

Welcome to Collymoon Craft Gin.

I’m Nicola, founder and distiller, and in 2023 I released my first gin, Gealach Úr — “New Moon” — the beginning of a new chapter in more ways than one.

After retiring from a fulfilling career in education, and encouraged by family and friends, I set out on a journey to explore the world of gin. What began as curiosity quickly became a passion. I immersed myself in the art and history of distillation, discovering the fascinating stories behind botanicals — their heritage, medicinal uses and the delicate balance of flavours they bring to the glass.

In my small gin kitchen at home, I began crafting and refining recipes, experimenting with locally foraged hedgerow botanicals alongside carefully selected ingredients from further afield.

In 2024 I launched my second gin, Solas An Earraich — “Spring Moon Beam” — which went on to win The Gin Guide Awards in 2025, a proud milestone in my journey as a small-batch producer.

Every bottle of Collymoon Craft Gin is made using traditional single-shot distillation methods. They are hand-labelled, individually wax-sealed and personally signed.

I am incredibly proud of what I create, and I hope that when you pour a glass, you’ll taste the passion, patience and story behind it.
